Baked prawn cakes with cauliflower mash

As you have probably realized I absolutely love sea food. In any form, shape, size and taste, as long as it tastes good. So here come the prawn cakes and cauliflower mash I made yesterday.

Prawn cakes and cauliflower mash

Prep time: 10 min. Cook time: 20 min

For the prawn cakes:

  • 1 kg cleaned and deveined prawns
  • 1 sweet pepper
  • 2-3 cloves of garlic
  • a handful of chopped parsley
  • 1 small onion chopped
  • 1/2 tsp sea salt and pepper to taste
  • 1 egg
  • 1/2 cup almond flour
  • Juice of 1 lime

For the cauliflower mash:

  • 1 large cauliflower head
  • Half a can of coconut milk
  • 2 cloves of garlic – minced
  • Salt and pepper to taste

  1. Put your prawns, sweet pepper, parsley, onion and garlic in a food processor and finely chop them. I always add tonnes of garlic to my food as it makes everything taste so much better!
  2. Add almond meal, salt, pepper, lime juice and egg and mix well.
  3. Form small, palm-sized cakes and put them on the baking tray lined with parchment.
  4. Bake at 180 C (350 F) for around 15-20 min or till your cakes start getting a little browned on the sides
  5. For the cauliflower mash – steam the florets till they are fairly soft and you can easily put a fork in them
  6. Heat your coconut milk with garlic, salt and pepper
  7. Mash milk and cauliflower together. I like mine a little grainy so I use a hand masher, but if you are feeling lazy or like it to be pureed – use a food processor.
  8. Serve with chopped parsley and enjoy!
